 Zucchini Noodles with Pesto


Ingredients (for 2 people)


2 large zucchinis


3 tbsp pesto (homemade or store-bought)


6 to 8 cherry tomatoes, halved


2 tbsp grated Parmesan cheese


1 tbsp olive oil


Salt & pepper


A few fresh basil leaves (for garnish)


Preparation

Prepare the zucchini noodles


Wash the zucchinis.


Using a spiralizer or a julienne peeler, cut them into long noodles (zoodles).


If you prefer them slightly cooked, sauté them for 1 to 2 minutes in a hot pan with a drizzle of olive oil (optional).


Seasoning


In a large bowl, gently mix the noodles with the pesto.


Season with salt and pepper and add a drizzle of olive oil.


Serving


Form an elegant nest in the center of a matte black plate.


Arrange the cherry tomatoes around or on top.


Sprinkle with grated Parmesan cheese.


Add a few fresh basil leaves for a visual and aromatic touch.


Gourmet Tip


Add toasted pine nuts or Parmesan shavings for extra crunch.


For a more substantial version: add a few slices of grilled chicken or shrimp.
