Crispy Parmesan Zucchini Fries
Ingredients (for 2 to 3 people)
2 large zucchinis
2 eggs (beaten)
80 g breadcrumbs (panko preferably)
40 g grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon oregano or Herbes de Provence
Salt & pepper
Olive oil or cooking spray
For the tzatziki sauce (optional but perfect):
1 Greek yogurt
½ grated and drained cucumber
1 clove of crushed garlic
Juice of ½ lemon
Salt, pepper, dill
Preparation
Preparing the zucchini
Wash and cut the zucchinis into sticks like fries.
Pat them dry thoroughly with paper towels to remove excess moisture.
Crispy coating
In a bowl, mix breadcrumbs + Parmesan + herbs + garlic powder + salt/pepper.
Dip each zucchini fry in the beaten egg, then in the crispy mixture.
Cooking
In the oven (lighter option)
Arrange on a baking sheet lined with parchment paper.
Lightly drizzle with olive oil or cooking spray.
Bake for 15 to 18 minutes at 210°C (410°F), until golden brown.
In the air fryer (even crispier)
12 minutes at 200°C (390°F), shaking halfway through cooking.
Quick Tzatziki Sauce
Mix all the ingredients: Greek yogurt, cucumber, garlic, lemon juice, salt, pepper, dill.
Keep refrigerated.
