Easy Zucchini and Beef Stir-Fry
Ingredients
400 g ground beef
2 zucchinis (cut into half-moons or slices)
1 medium onion, thinly sliced
2 cloves garlic, minced
1 bell pepper (red or green), diced
200 g diced tomatoes (fresh or canned)
2 tbsp olive oil
1 tsp Italian seasoning (oregano, basil, thyme)
Salt & pepper to taste
(Optional) Fresh parsley or basil for garnish
Instructions
Brown the beef
In a large skillet, heat 1 tbsp olive oil.
Add the ground beef, season with salt and pepper, and cook until browned and crumbled.
Set aside in a bowl.
Sauté the vegetables
In the same skillet, add the remaining oil.
Sauté the onion and bell pepper for 2-3 minutes until softened.
Add the garlic and cook for 30 seconds.
Add the zucchini
Add the zucchini slices and sauté for 5-6 minutes until tender but still crisp.
Tomatoes & seasoning
Add the diced tomatoes and Italian seasoning.
Return the beef to the skillet and mix well.
Simmer for 3-5 minutes to allow the flavors to meld.
Serving (rustic and appetizing style)
Serve hot, with a drizzle of olive oil or a little Parmesan cheese (optional).
Garnish with fresh chopped parsley or basil for the finishing touch.
Tips
Add rice or pasta for a complete meal.
Spice it up with a pinch of chili flakes or smoked paprika. For an extra treat: bake in the oven for 5 minutes with cheese until golden brown.
