 Squid Stuffed with Bacon and Herb Tomato Sauce


Ingredients (for 4 people):


For the stuffed squid:


8 cleaned squid tubes


150 g bacon, diced


100 g breadcrumbs


1 small onion, finely chopped


2 cloves garlic, minced


2 tablespoons fresh parsley, chopped


1 tablespoon fresh basil, chopped (or Herbes de Provence)


Salt, pepper


2 tablespoons olive oil


For the herb tomato sauce:


400 g diced tomatoes (canned or fresh, peeled and chopped)


1 medium onion, chopped


2 cloves garlic, minced


2 tablespoons olive oil


1 teaspoon sugar (to balance the acidity)


1 sprig of fresh thyme or oregano


Salt, pepper


Fresh parsley for garnish


Preparation:

1. Prepare the stuffing:


Cook the bacon in a hot pan without added fat until crispy. Drain on paper towels.


In the same pan, add a little olive oil if needed, and sauté the onion and garlic until translucent.


In a bowl, combine the crispy bacon, sautéed onion and garlic, breadcrumbs, parsley, basil, salt, and pepper.
