Squid Stuffed with Meat and Tomato Sauce


Ingredients (for 4 people):


8 fresh squid, cleaned (keep the tubes and tentacles separate)


300 g ground meat (beef or a pork/beef mixture)


1 medium onion, finely chopped


2 cloves garlic, minced


1 carrot, grated or diced


100 g breadcrumbs


1 egg


2 tablespoons chopped fresh parsley


Salt, pepper


400 ml tomato sauce (homemade or canned)


2 tablespoons olive oil


1 glass white wine (optional)


Preparation:

1. Preparing the stuffing:


Finely chop the squid tentacles.


In a bowl, mix the ground meat, chopped tentacles, onion, garlic, carrot, breadcrumbs, egg, and parsley.


Season with salt and pepper and mix well until the stuffing is homogeneous.


2. Stuffing the squid:


Carefully fill each squid tube with the stuffing, without overpacking to prevent them from bursting during cooking.


Close the opening with a toothpick.


3. Cooking:


In a large pan or Dutch oven, heat the olive oil.


Sauté the stuffed squid for a few minutes on all sides to lightly brown them.


Add the tomato sauce and white wine, if using.


Cover and simmer over low heat for 30 to 40 minutes, until the squid are tender.


4. Serving:


Serve hot, accompanied by rice, pasta, or steamed vegetables.


Tips:


You can add herbs like thyme or basil to the tomato sauce for more flavor.


For a more Mediterranean version, add black olives or capers to the sauce.
