 Braised Endives with Lemon and Thyme


Ingredients (for 4 people):


4 endives


2 tablespoons olive oil


Juice of 1/2 lemon


1 teaspoon sugar (optional, to reduce bitterness)


A few sprigs of fresh thyme


Salt and black pepper


Preparation:

1. Prepare the endives


Remove any damaged leaves if needed.


Cut the endives in half lengthwise.


Remove the tough core at the base if you want to reduce the bitterness.


2. Sear the endives


In a large pan or skillet, heat the olive oil.


Place the endives cut-side down.


Let them brown over medium heat for 5 to 6 minutes without moving them, until the bottom is nicely browned.


3. Braise


Gently turn the endives over.


Pour the lemon juice over them and add the sugar if using.


Season with salt and pepper, and add a few sprigs of thyme.


Cover and cook over low heat for 15 to 20 minutes, until tender.


You can add a splash of water or broth during cooking if the endives start to stick.


Finishing and serving


Arrange the endives on a plate.


Pour the lemon cooking juices over them.


Garnish with fresh thyme, lemon zest, or a few shavings of Parmesan cheese if desired.
