Fiesta Cabbage and Beef Stir-Fry


Ingredients (4 servings):


400 g ground beef


½ white cabbage (or green cabbage), finely shredded

1 red onion, thinly sliced


2 cloves garlic, minced


1 red bell pepper, sliced


1 yellow bell pepper, sliced


1 carrot, grated (optional)


2 tbsp tomato paste


1 tsp ground cumin


1 tsp smoked paprika


½ tsp chili powder or chili flakes (to taste)


2 tbsp olive oil


Salt, pepper


Fresh cilantro or parsley for serving


A squeeze of lime juice (optional)


Preparation:


Sauté the vegetables

In a large pan or wok, heat the oil. Sauté the onion, garlic, bell peppers, and carrot (if using) for 4-5 minutes until tender.


Add the cabbage

Add the shredded cabbage, mix well, and cook over medium heat for about 8 minutes, stirring regularly, until the cabbage begins to soften but is still slightly crisp.


Add the beef and spices

Push the vegetables to the sides of the pan. Add the ground beef to the center and brown it, breaking it up as it cooks. Once the meat is cooked through, mix it with the vegetables.


Season and combine

Add the tomato paste, cumin, paprika, chili powder, salt, and pepper. Mix well and simmer for another 5 minutes to allow the flavors to meld.


Finishing touches

Taste and adjust seasoning. Serve hot, garnished with fresh cilantro or parsley, and a squeeze of lime juice for extra flavor. Serving suggestions:


Mexican rice or plain rice


Tortillas or corn tortillas


A dollop of sour cream or guacamole

Black beans or corn salad
