Ingredients:


600g whole squid (cleaned) or squid rings


3 garlic cloves, finely chopped


Juice of 2 lemons


3 tablespoons olive oil


1 teaspoon sweet paprika (optional)


Salt and freshly ground black pepper


Chopped fresh parsley for garnish


Preparation:


Marinade

In a large bowl, combine the garlic, lemon juice, olive oil, paprika, salt, and pepper.

Add the squid, toss well to coat. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).


Grill Preparation

Preheat your grill, barbecue, or griddle pan to medium-high heat.


Cooking the Calamari

Lightly drain the marinade from the squid (save some for basting).

Grill the squid for 3-4 minutes per side, until well-marked, tender, and slightly crispy around the edges.


Finishing

Drizzle with any remaining marinade while cooking or just before serving.

Sprinkle with chopped fresh parsley.


Serving

Serve warm with lemon wedges and a simple side dish such as a green salad, rice, or sautéed potatoes.


Tips:


To prevent the squid from becoming rubbery, do not overcook it.
