Chinese-Style Chicken and Cabbage Stir-Fry
Ingredients (serves 4):
400g chicken breast, thinly sliced
½ Chinese cabbage or white cabbage, thinly sliced
1 onion, thinly sliced
2 garlic cloves, minced
1 tbsp grated fresh ginger
2 tbsp sesame (or peanut) oil
2 tbsp salty soy sauce
1 tbsp sweet soy sauce (or 1 tsp honey)
1 tbsp rice vinegar
1 tsp cornstarch
5 tbsp 1 tbsp water
1 pinch white pepper
Sesame seeds, chives, or fresh coriander for finishing
Preparation:
Prepare the sauce
In a small bowl, combine the salted soy sauce, sweet soy sauce (or honey), rice vinegar, water, cornstarch, and white pepper. Set aside.
Cook the chicken
Heat 1 tbsp oil in a wok or large skillet. Add the chicken strips and stir-fry over high heat until golden brown (about 5 to 7 minutes). Remove and set aside.
Sauté the vegetables
In the same wok, add the remaining oil. Sauté the garlic, onion, and ginger for 1 to 2 minutes, then add the shredded cabbage. Stir-fry for 5 to 8 minutes, until tender but still crisp.
Assemble Everything
Return the chicken to the wok with the vegetables. Pour in the sauce and stir-fry for 2 to 3 minutes, until the sauce thickens slightly and coats all the ingredients well.
Serve
Sprinkle with sesame seeds and fresh herbs. Serve hot with plain rice or fried noodles.
Tip:
Add mushrooms, julienned carrots, or bean sprouts for more texture and color! For a spicy twist, add a little chili or Sriracha to the sauce.
