Chinese-Style Beef and Onion Stir-Fry
Ingredients (Serves 4)
400g tender beef (rump steak, flank steak, or sirloin steak)
2 large yellow or white onions, sliced
2 cloves garlic, chopped
2 tbsp vegetable oil (peanut or sunflower)
For the beef marinade:
2 tbsp light soy sauce
1 tbsp cornstarch
1 tbsp sesame oil
1/2 tsp black pepper
For the sauce:
3 tbsp light soy sauce
1 tbsp dark soy sauce (for color and depth)
1 tbsp oyster sauce
1 tbsp rice vinegar (or mild white vinegar)
2 tbsp brown sugar or honey
4 tbsp water or broth
Preparation
Prepare the beef
Slice the meat into thin strips across the grain.
In a bowl, combine the light soy sauce, cornstarch, sesame oil, and pepper. Add the beef, coat well, and marinate for 15 to 30 minutes.
Prepare the sauce
In a small bowl, combine all the sauce ingredients and set aside.
Wok cooking
Heat 1 tablespoon of oil in a wok or large skillet over high heat.
Quickly sear the marinated beef (1 to 2 minutes) until almost cooked through. Remove and set aside.
Cook the onions
Add the remaining oil to the wok, then stir-fry the onion slices and garlic for 2 to 3 minutes, until slightly softened but still crisp.
Assembly
Return the beef to the wok, pour in the sauce, and cook for 1 to 2 minutes, stirring well until the sauce thickens slightly and coats the meat and onions.
Serving
Serve immediately, ideally with white rice or fried noodles.
Chinese restaurant tip: You can add a few slices of bell pepper or spring onion for more color and flavor.
