Avocado, Mango, and Shrimp Salad
Ingredients (serves 2-3):
200g cooked and peeled shrimp
1 ripe mango, diced
1 ripe but firm avocado, diced
1/2 red onion, finely sliced
Juice of 1 lime
2 tbsp olive oil
1 tsp honey or agave syrup (optional)
1 pinch sweet paprika or Espelette pepper (optional)
A few sprigs of fresh cilantro (or mint if you prefer)
Salt and pepper
Preparation:
Prepare the ingredients:
Dice the mango and avocado.
Finely slice the red onion.
If using whole shrimp, peel them and, if desired, slice them in half lengthwise.
Make the dressing:
Blend together the lime juice, olive oil, honey, a pinch of salt, pepper, and chili pepper if using.
Assemble the salad:
In a large bowl, gently toss the shrimp, mango, avocado, and onion.
Pour over the dressing and toss gently so as not to crush the pieces.
Finishing:
Sprinkle with fresh cilantro just before serving.
Serve chilled in small glasses, shallow bowls, or on a bed of mixed greens.
Tips & variations:
You can add a few diced cucumber or red bell peppers for extra crunch.
For a more Asian touch, add a drizzle of soy sauce and some grated fresh ginger to the dressing.
For an elegant appetizer, serve it in hollowed-out avocado halves or in glasses.
