Rice Gratin with Sausages and Peppers
Ingredients (for 4 to 6 people):
250 g rice (long grain or basmati type)
3 to 4 sausages (smoked, Toulouse, or merguez depending on your preference)
1 red bell pepper
1 yellow (or green) bell pepper
1 onion
2 cloves of garlic
20 cl fresh cream or liquid cream
100 g grated cheese (emmental, Gruyère, or mozzarella)
1 tbsp tomato paste (or 1 peeled and crushed tomato)
1 tsp paprika or Herbes de Provence
Olive oil, salt and pepper
Preparation:
1. Cook the rice
Cook the rice in a saucepan of boiling salted water. Drain and set aside.
2. Prepare the vegetables and sausages
Cut the sausages into slices.
In a large pan with a little olive oil, sauté the minced onion and chopped garlic.
Add the bell peppers cut into strips or cubes. Sauté for 8 to 10 minutes until tender.
Add the sausage slices and sauté until lightly browned.
Stir in the tomato paste, spices, a little salt and pepper. Mix well and simmer for 2-3 minutes.
3. Assemble the gratin
In a bowl, mix the cooked rice with the sausage and pepper mixture.
Add the cream and half of the grated cheese. Adjust the seasoning.
Pour everything into a lightly oiled gratin dish.
Sprinkle with the remaining cheese.
4. Baking
Preheat your oven to 190°C (375°F).
Bake for 20 to 25 minutes, until the top is golden brown. Tip:
Add a little sweet chili pepper or Tabasco sauce for a spicier kick. This dish pairs well with a green salad with vinaigrette or pickles to add some freshness.
