Grilled Sausages with Herb Couscous
Ingredients (serves 4):
For the grilled sausages:
4 quality sausages (merguez, chipolatas, or herb sausages, according to your taste)
1 drizzle of olive oil
Black pepper
For the herb couscous:
250g medium couscous
250ml boiling water
1 tbsp. 1 tbsp olive oil
Salt
Juice of ½ lemon
1 handful fresh flat-leaf parsley, chopped
1 handful fresh cilantro, chopped
1 handful fresh mint, chopped
2 spring onions, sliced (or shallots)
Optional: 1 small diced tomato, lemon zest, a pinch of cumin
Preparation:
1. Prepare the couscous:
Place the semolina in a bowl with a pinch of salt and olive oil.
Pour in the boiling water, cover, and let it soak for 5 minutes.
Fluff with a fork.
Add the lemon juice, fresh herbs, and spring onions, and mix gently.
Adjust the seasoning with salt, pepper, and even a little lemon zest or cumin to enhance the flavor.
2. Grill the sausages:
Preheat a grill pan, barbecue, or a conventional skillet.
Brush the sausages with a little olive oil.
Cook them over medium heat until golden brown on the outside and cooked through (about 10-12 minutes depending on their thickness), turning them regularly.
Serving:
Arrange the herb couscous on plates and add the grilled sausages on top or alongside. You can serve them with a lemon yogurt sauce or homemade tomato coulis.
