Ground Beef and Potato Stir-Fry
Ingredients
500g ground beef
700g potatoes
1 medium onion
1 garlic clove
1 red bell pepper (optional)
1 tbsp tomato paste (or 2 tbsp tomato purée)
1 tsp paprika
1 tsp herbes de Provence
Olive oil or other cooking oil
Salt, pepper
Fresh parsley for serving (optional)
Preparation
1. Prepare the ingredients
Peel and dice the potatoes.
Slice the onion and mince the garlic.
Cut the bell pepper (if using) into small pieces.
2. Cook the potatoes
In a large skillet or sauté pan, heat a drizzle of oil.
Sauté the diced potatoes over medium heat for 10 to 15 minutes, until tender and lightly browned.
Stir regularly. Season lightly with salt. Set aside.
3. Cook the meat
In the same pan, add a little more oil if needed. Sauté the onion, garlic, and bell pepper for 3-4 minutes.
Add the ground beef and cook until well browned.
Add the tomato paste, paprika, herbs, salt, and pepper. Mix well.
4. Mix and finish cooking
Return the potatoes to the pan. Gently toss to coat everything well.
Cook for another 5 to 10 minutes over low heat to allow the flavors to meld.
Tips
For a more indulgent version: add grated cheese at the end of cooking or top with a fried egg.
You can add peas or green beans for an even more complete dish.
