Homemade Cod Fritters
Ingredients (serves 4):
500g cod fillet (skinless and boneless)
120g flour
1 tsp baking powder
1 egg
150ml milk (or sparkling water for a lighter texture)
1 pinch of salt
1 pinch of pepper
1 pinch of paprika or curry powder (optional)
Frying oil
Preparation:
Prepare the fish:
Cut the cod into medium-sized pieces (4 to 6 cm).
Blot them dry with paper towels.
Prepare the batter:
In a bowl, combine the flour, baking powder, salt, pepper, and spices (if using).
Add the egg, then the milk gradually, whisking until you obtain a smooth, slightly thick batter.
Let the batter rest for 10 to 15 minutes.
Heat the frying oil to 170-180°C (330-356°F).
Coat the cod pieces in the batter, then gently lower them into the hot oil.
Fry for 4 to 5 minutes, turning halfway through, until the fritters are golden brown.
Drain on paper towels and serve hot, with lemon wedges and tartar sauce, aioli, or mayonnaise.
Tips:
For extra crispiness, replace some of the flour with cornstarch or use beer instead of milk.
You can also add fresh herbs (parsley, chives) to the batter for flavor.
