 Fiesta Cabbage and Beef Skillet


Ingredients (serves 4):


400g ground beef


½ white cabbage (or green cabbage), thinly sliced


1 red onion, thinly sliced


2 garlic cloves, minced


1 red bell pepper, sliced


1 yellow bell pepper, sliced


1 carrot, grated (optional)


2 tbsp tomato paste


1 tsp ground cumin


1 tsp smoked paprika


½ tsp chili powder or chili flakes (to taste)


2 tbsp olive oil


Salt and pepper


Fresh cilantro or parsley, to serve


A squeeze of lime juice (optional)


Preparation:


Sauté the vegetables

In a large skillet or wok, heat the oil. Sauté the onion, garlic, bell peppers, and carrot (if using) for 4-5 minutes until softened.


Add the cabbage

Stir in the shredded cabbage, mix well, and cook over medium heat for about 8 minutes, stirring regularly, until the cabbage begins to soften but remains slightly crisp.


Add the beef and spices

Push the vegetables to the sides of the pan. Add the ground beef to the center, browning it while breaking it up. Once the meat is cooked through, mix it with the vegetables.


Season and bind

Add the tomato paste, cumin, paprika, chili powder, salt, and pepper. Mix well and simmer for another 5 minutes to allow the flavors to blend.


Finishing

Taste and adjust the seasoning. Serve warm, garnished with fresh cilantro or parsley, and a squeeze of lime juice for a touch of spice.

Mexican rice or plain rice


Tortillas or corn tortillas


A dash of sour cream or guacamole


Black bean or corn salad.
