Chicken Fajita Casserole
Ingredients (Serves 4-6)
500g chicken breast, thinly sliced
3 bell peppers (red, green, yellow), sliced
1 onion, thinly sliced
2 tbsp olive oil
2 tbsp fajita seasoning (or a blend of paprika, cumin, garlic powder, chili powder, oregano)
150g grated cheese (cheddar, mozzarella, or Mexican blend)
200g cooked rice (optional for a more complete dish)
150g salsa or spicy tomato sauce
Salt and pepper
Preparation
Preheat the oven to 200°C (400°F).
Prepare the chicken and vegetables
In a large bowl, combine the chicken, bell peppers, and onion with the olive oil, fajita seasoning, salt, and pepper.
Assembly in the Dish
If using rice, spread a layer in the bottom of a casserole dish.
Spread the chicken and vegetable mixture over the top.
Drizzle the salsa evenly over the rice.
Bake
Cover with aluminum foil and bake for 20 minutes.
Remove the foil, sprinkle with grated cheese, and bake for another 10 minutes until the cheese is melted and golden.
Serving
Serve warm, garnished with fresh cilantro, and optionally with sour cream, guacamole, or tortillas.
Tip: For an even more authentic taste, add a few drops of lime juice before serving.
