 Classic Cabbage Soup

Ingredients (serves 4 to 6):

1 small head of green cabbage or kale, shredded

2 carrots, sliced

2 potatoes, diced

1 leek, shredded

1 onion, chopped

2 garlic cloves, chopped

1 can of chopped tomatoes (400g)

1 liter of vegetable (or chicken) broth

1 tablespoon of olive oil

1 teaspoon of thyme

1 bay leaf

Salt and pepper

(Optional): a few slices of smoked bacon, smoked sausage, or chunks of beef

Preparation:

Sauté the herbs
In a large pot, heat the olive oil. Add the onion, garlic, and leek and sauté for a few minutes until softened.

Add the vegetables
Add the carrots, potatoes, and cabbage. Sweat for 5 minutes, stirring.

Stir in the liquids and spices.
Add the chopped tomatoes, broth, thyme, and bay leaf. If you're adding meat (such as bacon strips or sausage pieces), now's the time!

Cooking
Cover and simmer over medium heat for 45 minutes to 1 hour, until all the vegetables are tender.

Season and serve
Add salt and pepper to taste. Serve hot, with a slice of toast or some grated cheese.
