Beef and French Onion Noodles
Ingredients:
300g beef (rump, sirloin, or flank steak), cut into thin strips
250g egg noodles (or thin noodles)
2 large yellow onions, finely sliced
3 tbsp olive oil or butter
2 cloves garlic, minced
1 tbsp soy sauce (optional)
1 tsp dried thyme
Salt and freshly ground pepper
Freshly chopped parsley, for garnish
Preparation:
Cook the noodles according to the package instructions, drain, and set aside.
Caramelize the onions:
In a large skillet or sauté pan, heat 2 tbsp oil or butter over medium-low heat.
Add the sliced onions and cook slowly for about 15 minutes, stirring regularly, until golden brown and well caramelized.
Add the chopped garlic and cook for another minute.
Cook the beef:
In another pan, heat the remaining oil over high heat.
Briskly fry the beef in strips for 2-3 minutes, just to sear the meat without overcooking. Season with salt and pepper. Add soy sauce if desired.
Mix and assemble:
Add the caramelized onions to the pan with the beef.
Add the cooked noodles, sprinkle with thyme, mix well, and stir-fry for 2 minutes to heat through and blend the flavors.
Serve hot, sprinkled with freshly chopped parsley.
Tips:
You can add sautéed mushrooms for more texture.
For a crunchy touch, sprinkle with toasted cashews or sesame seeds.
