Shrimp with Chimichurri Sauce
Juicy shrimp paired with a bold, herby chimichurri that’s zesty, garlicky, and full of fresh flavor. Perfect for grilling, pan-searing, or tossing over rice and veggies!
Chimichurri Sauce Ingredients
2 tbsp red wine vinegar
½ tsp crushed red pepper flakes (optional, for heat)
¼ cup fresh parsley, finely chopped
2 tbsp fresh cilantro, finely chopped (or use more parsley)
2 garlic cloves, minced
½ tsp dried oregano
⅓ cup olive oil
Salt & black pepper, to taste
Shrimp
1 lb shrimp, peeled & deveined
1 tbsp olive oil
Pinch of salt & pepper
Directions
Make the chimichurri — In a bowl, whisk together vinegar, red pepper flakes, parsley, cilantro, garlic, oregano, olive oil, salt, and pepper until well combined. Let rest for 10 minutes for flavors to develop.
Cook the shrimp — Heat olive oil in a skillet over medium-high heat. Season shrimp with salt and pepper, then sear 2–3 minutes per side until pink and opaque.
Serve — Drizzle shrimp generously with chimichurri sauce. Garnish with extra herbs if desired.
